JUST A FYI FOR THOSE NOT GETTING "CREATE AAC" option in their menus: IF YOU SELECTED A DIFFERENT "IMPORT USING" ENCODER UNDER PREFERENCES->GENERAL TAB IMPORT SETTINGS BUTTON.
You must have "AAC Encoder" selected or it won't show up as a menu option when you right-click the song.
